Ingredients
Scale
Meats
- 1/2 pound ground breakfast sausage
- 1/2 pound ground beef
Egg Mixture
- 8 large eggs
- 1/4 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Vegetables & Cheese
- 1 tablespoon olive oil
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 cup shredded cheddar cheese
Assembly
- 4 large flour tortillas (10-inch)
- Salsa or hot sauce (optional, for serving)
Instructions
- Cook meats: In a large skillet over medium heat, cook the ground breakfast sausage and ground beef together, breaking them apart with a spoon, until fully browned and cooked through. Drain excess grease and set the meat aside.
- Prepare egg mixture: In a medium bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.
- Sauté vegetables: Using the same skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers and sauté until softened, about 3 to 4 minutes.
- Scramble eggs: Pour the egg mixture into the skillet with the vegetables and cook, gently stirring, until the eggs are scrambled and just set.
- Combine meat and cheese: Return the cooked sausage and beef to the skillet, stirring to combine evenly with the eggs and vegetables. Remove from heat and stir in the shredded cheddar cheese until melted and well distributed.
- Warm tortillas: Slightly warm the flour tortillas to make them pliable and easier to roll.
- Assemble burritos: Divide the scramble mixture evenly among the tortillas, roll each into a burrito, and serve immediately. Optionally, toast the wrapped burritos in a dry skillet over medium heat for a few minutes on each side to achieve a crispy exterior.
Notes
- You can prepare the filling in advance and reheat before serving for convenience.
- Swap the cheddar cheese for pepper jack to add a spicy kick to the burritos.
- Add diced tomatoes, jalapeños, or avocado for extra flavor and texture.
