Meat Filling
- 3 slices bacon, cooked and chopped
- 16 oz breakfast sausage (raw)
- 1 tsp dried minced onion
- 2 Tbsp minced parsley
- 1/2 cup bread crumbs
- 1 egg (for mixture)

- 1 14-oz package puff pastry (thawed if frozen)
- 1 egg (for egg wash)
- 1 Tbsp water (for egg wash)
Instructions
- Combine Ingredients: In a large bowl, mix the cooked chopped bacon, raw breakfast sausage, dried minced onion, minced parsley, bread crumbs, and one egg until well combined.
- Prepare Puff Pastry: Lay out the thawed puff pastry on a lightly floured piece of parchment paper and cut it into 4 equal rectangular pieces.
- Shape Sausage Logs: Divide the sausage mixture into 4 equal parts. Shape each portion into a log roughly the length of a puff pastry piece.
- Assemble Rolls: Place each sausage log onto a puff pastry rectangle and stretch the pastry if needed to cover the sausage ends.
- Seal Pastry: Pull the sides of the puff pastry over the sausage and seal well to encase the filling inside.
- Freeze Rolls: Place the assembled sausage rolls seam-side down on a parchment-lined baking sheet and freeze for 30 minutes to firm up.
- Preheat Oven & Prep Egg Wash: While freezing, preheat your oven to 400°F (200°C). Whisk the remaining egg with 1 tablespoon of water to create an egg wash.
- Slice Rolls: After chilling, remove the sausage rolls from freezer and cut each into 6 individual pieces, yielding 24 rolls total.
- Arrange on Baking Sheet: Place sausage rolls about 1 inch apart on a parchment-lined baking sheet. You may need to bake in two batches.
- Apply Egg Wash: Brush each sausage roll generously with the egg wash to help achieve a golden finish.
- Bake: Bake the sausage rolls in the preheated oven for 20-22 minutes, or until the pastry is puffed and golden brown.
- Serve: Remove from oven and serve warm as a tasty appetizer or snack.
