Description

This Savory Baked Feta Potatoes recipe features tender baby potatoes roasted to golden perfection and topped with creamy, flavorful baked feta cheese. Enhanced with garlic, oregano, and optional lemon and fresh herbs, it’s an easy, satisfying side dish or appetizer perfect for any occasion.

Ingredients

Scale

For the Potatoes:

  • 1.5 lbs (680g) baby potatoes, halved
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano

For the Feta:

  • 1 block (7 oz / 200g) feta cheese
  • Optional: juice of ½ lemon or lemon zest
  • Optional: chopped fresh parsley or dill for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for roasting the potatoes.
  2. Prepare Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, half of the minced garlic, salt, and black pepper until evenly coated. Spread them in a single layer in a baking dish.
  3. Roast Potatoes: Place the baking dish in the oven and roast the potatoes for 25 to 30 minutes, or until they are golden brown and fork-tender.
  4. Add Feta Cheese: Remove the dish from the oven and nestle the block of feta cheese into the center of the potatoes.
  5. Season and Bake Again: Sprinkle the remaining garlic and dried oregano over the potatoes and feta. Return the dish to the oven for an additional 10 to 12 minutes, until the feta softens and turns slightly golden.
  6. Mix Feta with Potatoes: Take the dish out of the oven and break up the warm feta cheese, gently stirring it to coat the potatoes in its creamy texture.
  7. Add Finishing Touches: Drizzle with lemon juice or sprinkle lemon zest for a bright flavor, then garnish with chopped fresh parsley or dill if desired.
  8. Serve: Serve warm as a delicious side dish or appetizer to complement any meal.

Notes

  • If you prefer a stronger herby flavor, add fresh oregano along with the dried oregano before baking the second time.
  • Use fingerling or small new potatoes for best roasting results and quicker cook time.
  • For a spicier twist, add a pinch of red pepper flakes when tossing the potatoes.
  • The feta cheese can be substituted with halloumi or goat cheese for variation.
  • Ensure the baking dish is large enough to spread the potatoes in a single layer for even roasting.
  • Leftovers can be refrigerated and gently reheated; feta may harden, so add a splash of olive oil when reheating.
