These Shrimp Summer Rolls are a light and refreshing appetizer featuring cooked shrimp, vermicelli noodles, fresh vegetables, and herbs wrapped in tender rice paper. - 12 (8-inch) round rice paper wrappers
- 24 pieces of cooked shrimp, shelled and tails removed
- 4 ounces vermicelli rice noodles
- 3 small Persian cucumbers, thinly sliced
- 1 cup mixed greens or lettuce
- 1/4 cup chopped fresh cilantro
- 3 tablespoons chopped fresh mint
- 2 tablespoons chopped fresh chives
Dipping Sauce
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon peanut butter
- 1 tablespoon honey
- 1 tablespoon sesame seeds
- 1 teaspoon sesame oil
Instructions
- Cook Noodles: Cook the vermicelli rice noodles according to the package directions. Once cooked, drain and rinse them under cold water to cool, then set aside.
- Set Up Assembly Line: Arrange all your ingredients in an assembly line including rice paper, shrimp, cooked noodles, cucumbers, lettuce, and chopped herbs. Fill a large bowl or circular dish with about an inch of hot water — it should be warm but not boiling.
- Soften Rice Paper Wrappers: Dip one rice paper wrapper into the warm water and count to five to soften it. Carefully remove it and place it on a clean cutting board or surface.
- Assemble Rolls: On the softened rice paper, layer 3 shrimp, a quarter cup of noodles, some lettuce, a few cucumber slices, and a pinch of the chopped herbs. Roll the rice paper like a burrito by folding the bottom up over the ingredients, folding the sides inward, and then rolling tightly to enclose everything. Repeat until all ingredients are used.
- Prepare Dipping Sauce: In a small bowl, combine the soy sauce, rice vinegar, peanut butter, honey, sesame seeds, and sesame oil. Whisk the mixture until smooth and well combined.
Notes
- Be careful not to over-soak the rice paper wrappers or they will tear easily.
- You can substitute cooked chicken or tofu for shrimp if preferred.
- The dipping sauce can be adjusted for sweetness or saltiness by adding more honey or soy sauce to taste.
- Serve the rolls immediately for best texture or cover with a damp cloth to prevent drying if preparing ahead.
- Use gluten-free soy sauce if a gluten-free variation is needed.
