For the Rice:

  • 1 cup long-grain white rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 2 1/4 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1/4 cup chopped fresh parsley (optional)


Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C).
  2. Sear the Chicken: Season chicken thighs with salt, pepper, garlic powder, onion powder, and paprika. Sear in olive oil until golden brown.
  3. Sauté Aromatics: In the same skillet, sauté onion and garlic. Add rice, thyme, broth, and cream.
  4. Add Chicken: Nestle seared chicken on top of rice. Bake covered for 35–40 minutes.
  5. Rest and Serve: Let rest for 5 minutes before serving. Optional: sprinkle with parsley.
