- 1.5 lbs Ground Beef (80/20 blend recommended)
- 1 tbsp Worcestershire Sauce
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp Smoked Paprika
- Salt and Black Pepper, to taste
- Olive Oil, for cooking
Burger Components
- 4 Brioche Buns
- 4 slices American Cheese
- Lettuce, for serving
- Tomato slices, for serving
- Onion slices, for serving
For the Signature Sauce
- 1/2 cup Mayonnaise
- 2 tbsp Ketchup
- 1 tsp Mustard
- 1 tsp Relish
- 1/2 tsp Vinegar
- 1/4 tsp Garlic Powder
- 1/4 tsp Paprika
- Pinch of Cayenne Pepper
Instructions
- Prepare the Beef Mixture: In a mixing bowl, combine ground beef with Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper evenly. Mix gently to avoid overworking the meat.
- Form Patties: Divide the seasoned beef mixture into 8 equal portions and shape each into a ball to prepare for smashing.
- Chill Patties (Optional): Place the beef balls in the refrigerator for at least 30 minutes to help them hold together during cooking.
- Make the Signature Sauce: In a separate bowl, whisk together mayonnaise, ketchup, mustard, relish, vinegar, garlic powder, paprika, and cayenne pepper. Refrigerate for at least 30 minutes to meld flavors.
- Heat the Skillet: Preheat a cast iron skillet over medium-high heat and add olive oil until it shimmers, ensuring a hot surface for searing.
- Cook the Patties: Place each beef ball on the skillet and smash it thin using a spatula or burger press. Cook for 2-3 minutes until a brown crust forms, then flip and cook for another minute. Place a slice of American cheese on each patty and allow it to melt as the second side cooks.
- Toast the Buns: If desired, lightly toast the brioche buns in the same skillet or a toaster to enhance texture and flavor.
- Assemble the Burgers: Spread the prepared signature sauce on both halves of the buns. Layer with lettuce, tomato, onions, and two cheese-topped patties per bun. Serve immediately.
Notes
- Chilling the patties before cooking helps prevent them from falling apart during the smashing and cooking process.
- The signature sauce can be customized by adjusting the amount of cayenne pepper for more or less heat.
- Use a heavy spatula or burger press to get an even, thin smash on each patty for the authentic texture.
- Brioche buns add a sweet, buttery flavor that complements the savory beef; other buns can be used as alternatives.
- For best sear and crust, do not overcrowd the skillet; cook patties in batches if necessary.
