Instructions

  1. Mix the seasonings: In a small bowl, combine the chipotle chili powder, cumin, smoked paprika, onion powder, garlic powder, salt, and cayenne pepper to create the spice blend.
  2. Season the chicken: Evenly sprinkle the prepared spice mixture over both sides of each chicken breast, ensuring an even coating for maximum flavor.
  3. Heat the oil: Place 1 teaspoon of coconut oil in a large skillet over medium heat and allow it to warm up before adding the chicken.
  4. First side cooking: Add the chicken breasts in a single layer to the skillet and cook for 6 to 7 minutes until the underside is nicely browned.
  5. Flip and add oil: Turn the chicken breasts over and add the remaining teaspoon of coconut oil to the skillet to aid in cooking the other side.
  6. Cook until done: Continue cooking for another 6 to 7 minutes until the chicken reaches an internal temperature of 160ºF and the juices run clear.
