Description

This Spicy Shrimp and Avocado Rice Bowl is a vibrant and flavorful dish combining tender jasmine rice with spicy, succulent shrimp, fresh avocado, and crisp cherry tomatoes. Enhanced with chili garlic sauce, soy sauce, and lime juice, it offers a delightful balance of heat and freshness, perfect for a quick and satisfying meal.

Ingredients

Scale

Rice

  • 1 cup jasmine rice
  • 2 cups water

Shrimp and Sauce

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon soy sauce
  • 1 teaspoon chili garlic sauce
  • 2 teaspoons lime juice
  • Salt and pepper to taste

Toppings

  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Rinse Rice: Rinse the jasmine rice under cold water until the water runs clear to remove excess starch, ensuring the rice cooks up fluffy and light.
  2. Cook Rice: Bring 2 cups of water to a boil in a medium saucepan. Add the rinsed rice, cover, reduce heat to low, and simmer for 15-20 minutes, or until the rice is tender and water is absorbed. Fluff with a fork and keep warm.
  3. Heat Oil and Cook Shrimp: While the rice cooks, heat olive oil in a large skillet over medium-high heat. Add the shrimp to the skillet and season with salt and pepper.
  4. Cook Shrimp: Cook shrimp for 2-3 minutes per side until they turn opaque and are cooked through.
  5. Add Sauce to Shrimp: Stir in soy sauce, chili garlic sauce, and lime juice into the skillet. Cook for another minute to coat the shrimp well, then remove from heat.
  6. Assemble Bowls: Divide the cooked rice into bowls. Top each bowl with the spicy shrimp, diced avocado, halved cherry tomatoes, and chopped cilantro.
  7. Garnish and Serve: Sprinkle toasted sesame seeds on top and optionally add an extra squeeze of lime juice. Serve immediately for best flavor and texture.

Notes

  • Rinsing rice is essential for fluffy texture by removing excess starch.
  • Shrimp cooks quickly; avoid overcooking to keep it tender.
  • Adjust chili garlic sauce quantity according to your spice preference.
  • To save time, you can prepare the rice ahead and reheat before assembling.
  • Fresh lime juice brightens the flavors just before serving.
