Description

This delightful Strawberry Jello Cake combines a soft, moist vanilla cake base with a fruity strawberry jello topping and a creamy whipped cream finish. Perfect for a refreshing dessert that is both easy to make and irresistibly delicious, this cake is a sweet treat ideal for family gatherings and special occasions.

Ingredients

Scale

Cake Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, melted

Topping

  • 1 box (3 oz) strawberry jello
  • 1 cup whipped cream

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and grease a rectangular baking pan to prevent the cake from sticking.
  2. Mix dry ingredients: In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and a pinch of salt. Stir well to evenly distribute the ingredients.
  3. Add wet ingredients: Add the eggs and whole milk to the dry mixture and blend until the batter is smooth and free of lumps. Then stir in the melted unsalted butter until fully incorporated.
  4. Bake the cake: Pour the batter evenly into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean, indicating the cake is cooked through.
  5. Cool and prepare cake: Allow the cake to cool completely in the pan. Once cooled, use a fork or skewer to poke holes all over the surface of the cake.
  6. Prepare strawberry jello: Make the strawberry jello according to package instructions, usually requiring boiling water and cold water. Refrigerate until the jello is slightly thickened but not fully set.
  7. Pour jello over cake: Carefully pour the slightly thickened jello evenly over the cake’s surface, allowing it to seep into the holes. Place the cake back into the refrigerator and chill until the jello is fully set.
  8. Add whipped cream topping: Before serving, spread the whipped cream evenly over the top of the set jello for a creamy finishing touch.

Notes

  • Make sure the cake is completely cool before poking holes and adding the jello so the jello doesn’t melt.
  • Chill the cake thoroughly to allow the jello to set firmly for best texture.
  • You can substitute low-fat milk if desired for a lighter version, but the cake may be slightly less moist.
  • Whipped cream topping can be sweetened or flavored with vanilla for added taste.
