Instructions

  1. Make the white chocolate ganache: Place the white chocolate chips in a medium microwave-safe bowl and add the heavy cream. Microwave on high for 1 to 1½ minutes, stirring every 30 seconds until smooth and melted.
  2. Combine ganache ingredients: Stir in the chopped strawberries, vanilla extract, and kosher salt until the mixture is smooth and runny.
  3. Chill the ganache: Cover the bowl and refrigerate for 1 hour or until the ganache has fully set to a firm consistency.
  4. Form truffle balls: Line a large baking sheet with parchment paper. Scoop and shape the ganache into 10 equal-sized balls, about 2 inches in diameter, and place them on the parchment-lined sheet.
  5. Refrigerate truffles: Chill the formed truffle balls for an additional 30 minutes to firm up.
  6. Melt the milk chocolate coating: Microwave the milk chocolate melting wafers for 1 to 1½ minutes, stirring every 30 seconds until completely melted and smooth.
