Ingredients
Scale
Ganache
- 12 ounces white chocolate chips (340 grams, 1 bag)
- 2 tablespoons heavy cream (28 grams)
- ½ cup chopped strawberries (84 grams)
- ½ teaspoon pure vanilla extract (2 grams)
- â…› teaspoon kosher salt
Coating and Garnish
- 10 ounces milk chocolate melting wafers (284 grams, 1 bag)
- 1-2 ounces melted white chocolate (28-57 grams, for drizzling)
- Pink or red sprinkles
- Crushed freeze-dried strawberries
Instructions
- Make the white chocolate ganache: Place the white chocolate chips in a medium microwave-safe bowl and add the heavy cream. Microwave on high for 1 to 1½ minutes, stirring every 30 seconds until smooth and melted.
- Combine ganache ingredients: Stir in the chopped strawberries, vanilla extract, and kosher salt until the mixture is smooth and runny.
- Chill the ganache: Cover the bowl and refrigerate for 1 hour or until the ganache has fully set to a firm consistency.
- Form truffle balls: Line a large baking sheet with parchment paper. Scoop and shape the ganache into 10 equal-sized balls, about 2 inches in diameter, and place them on the parchment-lined sheet.
- Refrigerate truffles: Chill the formed truffle balls for an additional 30 minutes to firm up.
- Melt the milk chocolate coating: Microwave the milk chocolate melting wafers for 1 to 1½ minutes, stirring every 30 seconds until completely melted and smooth.
- Dip the truffles: Using a fork or dipping tool, coat each truffle in the melted milk chocolate. Place them back on the parchment paper and immediately sprinkle with pink or red sprinkles and crushed freeze-dried strawberries before the coating hardens.
- Add decorative drizzle: Once the milk chocolate has hardened, drizzle melted white chocolate over the truffles and sprinkle additional sprinkles if desired for a festive finish.
- Final set: Allow the chocolate coatings and drizzle to harden completely before serving or storing.
Notes
- Use fresh, ripe strawberries for the best flavor in the ganache.
- If white chocolate is temperamental during melting, stir gently and avoid overheating to prevent scorching.
- Chilling times are essential to get firm truffles that dip well.
- Store truffles in an airtight container in the refrigerator for up to 1 week.
- Feel free to customize toppings with shredded coconut or nuts if desired.
