Sweet Potato

Caramelised Onions
- 1 large onion, thinly sliced
- 1 tbsp butter
- 1 tsp brown sugar
Topping
- 4 oz feta cheese, crumbled
- 1 tsp fresh thyme leaves
- 1 egg, beaten (for egg wash)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and for easier cleanup.
- Roast Sweet Potatoes: Toss the thinly sliced sweet potatoes in olive oil, salt, and black pepper. Spread them on the lined baking sheet and roast for about 20 minutes until tender. Once done, set aside to cool slightly.
- Caramelize Onions: In a skillet over medium heat, melt butter and add the sliced onions. Cook them slowly until soft, then sprinkle brown sugar and continue cooking until golden and caramelized, approximately 15 minutes. Remove from heat and set aside.
- Prepare Puff Pastry: On a lightly floured surface, gently roll out the puff pastry slightly larger than its original size. Transfer it to the baking sheet and use a knife to score a 1-inch border around the edges, being careful not to cut through the dough.
- Assemble Tart: Spread the caramelized onions evenly inside the scored border. Arrange the roasted sweet potato slices on top of the onions. Sprinkle crumbled feta cheese and fresh thyme leaves evenly over the tart.
- Egg Wash and Bake: Brush the exposed pastry border with the beaten egg to give it a golden shine while baking. Place the tart in the preheated oven and bake for 20 to 25 minutes, or until the pastry is puffed up and golden brown.
