Sweet Potato Hash Browns

- 1 large egg (whisked)
- 2 Tbsp. butter (or oil)
Instructions
- Prep the Potatoes: Peel the sweet potatoes using a vegetable peeler, then shred them using a large food processor or a handheld cheese grater. You should have about 6 cups of shredded potatoes at the end of this step.
- Make the Batter: In a large bowl, combine the shredded sweet potatoes with the flour, garlic powder, paprika, cumin, salt, and black pepper. Toss everything together until the potatoes are evenly coated. Then, pour in the whisked egg and mix thoroughly until all shredded potatoes are covered.
- Cook the Hash Browns: Heat 1 tablespoon of butter or oil in a cast-iron skillet over medium heat until melted and shimmering. Using a ⅓ cup measuring cup, scoop out portions of the potato mixture and place them onto the skillet, making sure to cook no more than 3 at once and that they are not touching. Press down each mound with the back of a spatula until they are about ½-inch thick. Cook for 4 to 5 minutes on each side, flipping only once a golden crust has formed. Repeat with the remaining butter and potato mixture.
